Cozy Comfort Food: Zeke's Mac and Cheese
The coziest cook is one who doesn’t even need a recipe. That is my friend’s Zeke who made the most amazing mac and cheese the other night, and made it i might add, in his pajamas!!! Not only is Zeke an awesome cook he is also an amazing photographer. (he does fantastic headshots!)
Check out his recipe and his website: headshots.zekek.com
ZEKE’S MAC AND CHEESE
as told to me after only one glass of wine
Brown rice pasta from Trader Joes cooked al dente (he says any pasta will do but this was really good and I am a totally traditional pasta eater!)
GOOD CHEESES – now I know, this is key!!!
extra extra sharp white cheddar – 1 1/2 – 2 cups
Parmesean, Mozarella and Provolone – about 1/4 or so cup each
flour, butter, half and half
secret ingredient: a tablespoon Liquid Smoke! (who knew!)
bread crumbs
Preheat over to 350
Cook pasta al dente.
Make roux with butter, flour and half and half.
stir in cheeses
mix with pasta
sprinkle breadcrumbs over top
pour into buttered baking dish
bake for about 35 mins and broil to crisp breadcrumbs for about 5 mins.
Delicious!!!
Zeke, please comment if I made any mistakes!
