Cozy Recipe: Mushrooms and Chestnuts in cream

This is the recipe I made over Christmas that was really delicious. And since it’s January and snowy or rainy in many parts of the country I thought it was definitely still worth posting. I bought the chestnuts from Trader Joe’s but if you decide to roast them yourself, imagine how amazingly cozy your house will smell!!!

1 1/2 lbs chestnuts
3 tbl. butter
1 1/2 tbl. olive olive oil
1 1/2 lbs mushrooms quartered
6 tbl. sherry
1/4 finely chopped onions
3/4 cup chicken broth
1 1/2 tsp fresh thyme or 1/2 tsp. dried
6 tbl whipping cream
1 1/2 tbl minced fresh parsley

Roast or boil your chestnuts, however you prefer and de-shell.

Melt half the butter with olive oil in a large non-stick skillet. Add the quartered mushrooms and sautee until golden brown. Add sherry until evaporated. Remove from heat and set aside.
Sautee onion with remaining butter in a heavy medium skillet. Add chestnuts, chicken broth and thyme and bring to a boil. Cover and simmer until chestnuts are tender, about 10 mins. Transfer to skillet with mushrooms. Add whipping cream to chestnut mixture and simmer till slightly thickened. Transfer to a bowl and sprinkle with parsley.

    My mouth is watering at the thought of this dish, and the smell of roasting chestnuts, simply divine.
