Cozy Turkey Trio

I watched a very inspiring Jamie Oliver Christmas special over the holidays on what to do with leftover turkey – for me always a quandry! So thank you Jamie Oliver for coming up with the recipe for Turkey & Leek Pie! Leftovers are such a good thing, especially after Christmas and nothing is cozier than turkey. I put on my thinking cap and quickly concluded that you needed a turkey in order to have leftover turkey so off to the store we went. Genius, right? I decided this turkey would be a great way to solve part of our post-Christmas menu dilemma. Since there’s only two of us I would figure out a way to enjoy the bird in a variety of new and un-Thanksgiving-y ways! I will definitely make turkey rice soup (which will be perfect for these cold Seattle days we’re having right now and figure out our ongoing lunch drama!). I needed some new side dishes that have nothing to do with cranberries or mashed potatoes!

A quick flip through the archives of my old recipe book unearthed this gem:
Chestnuts and Mushrooms in sherry and cream. What a GREAT side dish! Now all I have to do is find the recipe on line so I can share it (I’ve had this recipe for over 10 years and never made it till now!).
It was rich, simple and special!

Lets bump broccoli up notch with a recipe for Asparagus Parmesean puddings. Asparagus is too darn expensive and being flown in from God knows where so lets use brocccoli instead! Again, these are easy and really delicious. Bake them while the turkey is cooling! The image above “borrowed” from Trader Joe’s website and actually made with spinach – timbales are very versatile!

Here’s the clip from the show – if this doesn’t have you rushing out to buy a turkey I don’t know what will! As good as the chestnuts rolled in the puff pastry sound I found they really didn’t add that much flavor and would not go out of my way to include them next time. This dish definitely has enough deliciousness going on without them!
We really enjoyed this trio of turkey recipes, they were do good and not to mention a total bargain!
Also total comfort food for the month of January which I think should be called National Comfort Food month or should that be National Cozy Food month?!!!
